Christmas Recipe: Classic Gingerbread Cookies

One of my very favorite Christmas cookie recipes is for gingerbread cookies! There’s just something about classic gingerbread cookies decorated with dainty white icing that creates a sense of nostalgia, and the warmth of the spices give a cozy feeling.  Plus, it’s a favorite Christmas recipe – at home or on the road – to make with kids.

Classic Gingerbread Cookies

Ingredients:

  • ½ cup white sugar
  • ½ cup brown sugar, firmly packed
  • ¾ cup butter, melted and cooled
  • 1 egg
  • ¼ cup molasses
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 ¼ tsp ground cinnamon
  • ½ tsp salt
  • ¾ tsp ground cloves
  • ¾ tsp ground ginger
  • Extra sugar (depending on method)

Make-ahead tip: Combine flour, baking soda, and all spices together in a gallon size food storage bag. Freeze until ready to use.

Directions:

  • Beat sugars, butter, and egg together into extremely smooth. Add molasses and mix well.
  • If you haven’t pre-made the flour mixture, whisk those ingredient together in a separate bowl now. Slowly add to the molasses mixture in 3 portions, mixing well after each addition.
  • Cover and chill dough in the fridge for at least 1 hour.
  • Preheat oven to 375 degrees F.
  • To make molasses crinkles, scoop tablespoon-size portions of cookie dough, roll into smooth balls, and roll in the extra sugar. Place 2 inches apart on a cookie sheet. Bake 8-10 minutes or until deep golden brown and the tops start to “crinkle” or crack. Cool on wire racks.
  • To make flat gingerbread cookies, lightly flour your kitchen counter and roll the chilled dough to about ¼” thickness. Use cookie cutter to cut shapes and place on baking sheet. Bake 8-10 minutes or until deep golden brown. Remove and cool on wire racks. A storebought tube of white decorator’s icing is perfect to draw some pretty little designs on your gingerbread cookies!
